Before going out for a day\u2019s activities or exercise, you need a full belly.<\/p>\n\n\n\n<p>Otherwise, you may not have as much fun as you should. But being in a campervan gives you some measure of restriction in the meals that you are able to make.<\/p>\n\n\n\n<p>It also doesn\u2019t mean that you can\u2019t have fun with making <a href=\"https:\/\/yepcampers.com\/en\/blog\/esplora-sardegna\/easiest-meals-cook-camping-sardinia\/\">meals<\/a>.<\/p>\n\n\n\n<p>These are some of the meals you can make on a camper trip in Sardinia:<\/p>\n\n\n\n\n\n<h3 class=\"wp-block-heading\" id=\"1-breakfast-potatoes-the-king-of-camper-recipes\">Breakfast Potatoes, the king of camper recipes<\/h3>\n\n\n\n<p>Nothing is quite as easy and quick to make as <a href=\"https:\/\/littlespicejar.com\/easy-skillet-breakfast-potatoes\/\" target=\"_blank\" rel=\"noopener\">potatoes<\/a>. Keep aside.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Peel the garlic and onions. Mince the garlic and chop the onions. Also keep aside.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Seed both the red pepper and the green pepper. Then chop them roughly.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Put a skillet on a stove over medium heat, then add butter and olive oil.<\/span><\/li><li><span style=\"color: #5b5b5b;\">When the butter is melted, add the minced garlic, the chopped onions, the bell peppers and the chopped potatoes.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Stir and turn frequently to avoid burning and sticking.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Cook for about 15 minutes until the potato is tender.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Then add in the salt and cayenne pepper.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Serve warm.<\/span><\/li><\/ol>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"2-french-toast-for-breakfast\">French Toast for Breakfast<\/h3>\n\n\n\n<p>French toast is super easy to make. It saves time, and you can always make it with whatever you have in the fridge or on the kitchen counter. And while camping in a campervan, nothing beats easy to make.<\/p>\n\n\n\n<p><strong>Ingredients <\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><span style=\"color: #5b5b5b;\">10 slices of bread<\/span><\/li><li><span style=\"color: #5b5b5b;\">1 cup of milk (skimmed milk, whole milk, coconut milk, buttermilk or almond milk)<\/span><\/li><li><span style=\"color: #5b5b5b;\">2 large eggs<\/span><\/li><li><span style=\"color: #5b5b5b;\">1 tablespoon of maple syrup, honey or granulated sugar<\/span><\/li><li><span style=\"color: #5b5b5b;\">1 pinch of salt<\/span><\/li><li><span style=\"color: #5b5b5b;\">1 tablespoon of ground cinnamon<\/span><\/li><li><span style=\"color: #5b5b5b;\">1 tablespoon of vanilla extract<\/span><\/li><li><span style=\"color: #5b5b5b;\">Butter<\/span><\/li><\/ul>\n\n\n\n<p><strong>Directions <\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li><span style=\"color: #5b5b5b;\">Whisk the eggs, milk, vanilla extract, sugar, cinnamon and salt together to form a consistent egg mixture in a small bowl, preferably a flat-bottomed one.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Put one slice of bread into the egg mixture at a time.To make sure both sides of the bread are well coated with egg mixture, turn them over. Be careful so you don&#8217;t get them soaked in the egg mixture hence they become soggy and easily break away.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Put a skillet on the stove on medium heat and melt the butter.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Put the bread slices in the skillet and cook until one side is golden brown. Then flip again to cook the other side of the bread. Both sides should be properly done in about two or three minutes.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Serve immediately. Note: French toast is best eaten hot or warm. But if you are not going to eat it immediately, keep it warm in an oven.<\/span><\/li><\/ol>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"3-mac-%E2%80%98n%E2%80%99-cheese-for-lunch\">Mac \u2018N\u2019 Cheese for Lunch<\/h3>\n\n\n\n<p>For lunch, you can make a simple meal of mac and cheese. It is super easy to make and you can get it done in about thirty minutes.<\/p>\n\n\n\n<p><strong>Ingredients <\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><span style=\"color: #5b5b5b;\">\u00bc cup of butter<\/span><\/li><li><span style=\"color: #5b5b5b;\">\u00bc cup of flour<\/span><\/li><li><span style=\"color: #5b5b5b;\">1 box of macaroni<\/span><\/li><li><span style=\"color: #5b5b5b;\">A pinch of ground black pepper<\/span><\/li><li><span style=\"color: #5b5b5b;\">2 cups of milk<\/span><\/li><li><span style=\"color: #5b5b5b;\">2 cups of cheddar cheese, shredded<\/span><\/li><li><span style=\"color: #5b5b5b;\">1 teaspoon of salt<\/span><\/li><\/ul>\n\n\n\n<p><strong>Directions<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li><span style=\"color: #5b5b5b;\">Add one teaspoon to water and bring it to boil.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Cook the macaroni in the water. Stir it occasionally until it is cooked rare. This should take about 8 minutes. Drain out the excess water.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Put a pot on stove on medium heat. Melt the \u00bc cup of butter in the pot.<\/span><\/li><li><span style=\"color: #5b5b5b;\">When it is melted, add in the \u00bc cup of flour, a pinch of salt, and the ground pepper, stirring until the mixture is smooth in about five minutes. Very slowly pour the milk into the mixture and stir vigorously and continuously until the mixture is smooth and bubbling. This should take about five minutes.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Add the shredded cheddar cheese until it is melted in about three or four minutes.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Finally, fold the macaroni into the cheese sauce until it is completely coated with cheese.<\/span><\/li><\/ol>\n\n\n\n<p><strong>Note:<\/strong> The best thing about cheese in mac and cheese is that you cannot have too much cheese. The more cheese, the better your mac and cheese tastes. Then be careful when pouring in the milk. Milk boils quickly and burns really fast. So don\u2019t ease up on the stirring else your mac and cheese will taste of burnt milk.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"4-pasta-with-chickpea-tomato-sauce-for-dinner\">Pasta with Chickpea Tomato Sauce for Dinner<\/h3>\n\n\n\n<p>After a long day\u2019s activities, this is a king\u2019s dinner for you to fall back on and enjoy outside under the stars.<\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><span style=\"color: #5b5b5b;\">1 can of chicken broth<\/span><\/li><li><span style=\"color: #5b5b5b;\">1 can of crushed tomatoes<\/span><\/li><li><span style=\"color: #5b5b5b;\">1 pound of pasta shells (medium-sized)<\/span><\/li><li><span style=\"color: #5b5b5b;\">3 cups of chickpeas (cooked)<\/span><\/li><li><span style=\"color: #5b5b5b;\">\u00bc teaspoon of flakes (red-pepper)<\/span><\/li><li><span style=\"color: #5b5b5b;\">1 sprig of fresh basil<\/span><\/li><li><span style=\"color: #5b5b5b;\">Shredded fresh basil leaves for garnish<\/span><\/li><li><span style=\"color: #5b5b5b;\">2 cloves of minced garlic<\/span><\/li><li><span style=\"color: #5b5b5b;\">1 tablespoon of olive oil<\/span><\/li><li><span style=\"color: #5b5b5b;\">Coarse salt<\/span><\/li><li><span style=\"color: #5b5b5b;\">Grated Parmesan cheese<\/span><\/li><\/ul>\n\n\n\n<p><strong>Directions <\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li><span style=\"color: #5b5b5b;\">Bring salted water to boil and cook pasta in it.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Drain the pasta, return to pot and keep aside.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Place saucepan on stove on medium heat. Pour the oil and leave until it is hot.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Add the red pepper flakes and minced garlic. Cook for bout thirty seconds until it is fragrant. Make sure it does not burn, at which point it turns brown.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Add the chickpeas and salt to taste. Then cook for five minutes.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Add chicken broth, tomatoes and let boil.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Reduce the heat to a simmer and cook for twenty minutes until the broth has thickened and reduced.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Add the sprig of basil, cook for five minutes and remove the basil.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Add the sauce to the already cooked pasta and toss.<\/span><\/li><li><span style=\"color: #5b5b5b;\">Garnish it with the shredded basil leaves, and serve with Parmesan cheese.<\/span><\/li><\/ol>\n\n\n\n<p><em>When you are out in Sardinia camping in your RV, make sure that you are properly fed.
